We tasted the results of some exciting trials they are conducting with the rarer grape varieties Arbane, Petit Meslier and Pinot Gris.

I don't drink Champagne/Prosecco/Cava/Bubbly/whatever to try to be 'posh' or 'snobby', I really do enjoy drinking and enjoying it and like most things, I have my favourites! There is both good volume and intensity to the delicious and solidly complex middle-weight flavours that are supported by a firm and moderately exuberant mousse that carries over to the nicely dry but not really austere finale.These house the treasured Bollinger wines, including a matchless collection of over 700,000 magnums of reserve wines, poised and ready to be blended into the House’s masterstroke of consistency; Bollinger Special Cuvée. Champagne Bollinger owns an impressive 178 hectares of vineyards, of which 85% are in Grand Cru and Premier Cru villages. Bollinger is the only house to have aresident cooper in situ to take care of more than 3500 barrels only dedicated to Bollinger Champagnes.

Nearly two hundred years later, Bollinger are one of the biggest names in the region and are famously the preferred champagne brand of fictional British Secret Service agent, James Bond. Our visit to Bollinger with Jancis Robinson MW included a tour of the newly renovated cellars and a tasting of Champagne produced during WWI.Bollinger don’t talk about which wine their non-vintage blends are based on because reserve wines constitute a good 50% of the blend. Consuming alcoholic beverages during pregnancy, even in small quantities, can have serious consequences on the child’s health. Producers allege that Pinot Meunier lacks ageing potential, but this does not deter Krug from including around 15% of it in their final blends. In 1911, Georges Bollinger’s British agent gave him the idea for the name Special Cuvée - “special” written the English way, without an accent. Bolly is one of the most arresting of all Champagnes because the wines are fermented in oak barrels, giving the flavour an extra dimension of power and nobility.
