N. spice cabinet, Drumshanbo Gunpowder Irish Gin throws in one more highly local ingredient: meadowsweet from the town of Drumshanbo itself. He created The Shed Distillery of PJ Rigney, with its medieval copper pot stills, and began a quest to fuse oriental botanicals with the local Irish ones. Three kinds of citrus fruit: grapefruit, lemon and makrut lime join the tea and are vapor distilled. Drumshanbo Gunpowder Irish Gin is a product of The Shed Distillery, a boutique operation in rural Ireland. The Shed continues to create ambitious, international brands with a “Curious Edge,” setting new standards to compete with the best the world’s leading brands have to offer.

No doubt Rigney’s glad to be part of the Irish gin boom, but the 30-year entrepreneurial veteran founded his distillery just as much to create economic opportunity in the town and surrounding County Leitrim as to make some damn good gin. We’ve also found that, if you let the the gin linger in your mouth, there’s a lovely peppery sensation. Despite how efficiently gin can be produced, Rigney intentionally slows the process, combining the two major gin distilling methods.

All the way from Ireland's County Donegal comes An Dúlamán Irish Maritime Gin, which wears its coastal influence on its sleeve. I would never use it for a Martini, because I love the classic very dry Bombay or Tanqueray Martini — pour a little vermouth in the glass, swirl it around, and pour it out before adding the gin. The bright and spacious Jackalope Café serves a wide range of hearty Irish foods, along with a curious selection from the many journeys of the Curious Mind of PJ Rigney.

We love the Drumshanbo gin bottle and think it looks a bit like an upturned art deco lampshade (if you squint a bit and imagine it naked, sans labels). Enough juniper for classic gin fans, but also heavy on the citrus and herbs, without overpowering each other. That’s more tonic that we’d normally use as a rough guide, but we think the suggested serve is spot on (and they’re the experts! Prince Albert of Monaco was among the first purchasers of the forthcoming “grand-cru Irish whiskey” currently maturing in Drumshanbo (we can only assume he has a whiskey-themed countdown calendar).

It was a and hot and humid evening and the light yet flavourful gin with tonic and kalamatazi lime was the perfect drink . It’s all quite unexpected, but the gin is never short of engaging — and I daresay it’s a versatile operator, too. Relax and enjoy yourself over a hot or cold beverage, and keep an eye out for the elusive namesake of the café, the Drumshanbo Jackalope. The remaining ingredients, including Macedonian juniper, are macerated and distilled in a pot still.The first release from the Boatyard Distillery in Lough Erne, Northern Ireland, is Boatyard Double Gin! Among the reasons Rigney founded his distillery here is that the 2014 opening of The Shed made it the first distillery to open in the entire Irish province of Connacht in 101 years.
